The Fuul medames is instead one of the best known dishes in all of Egypt, and is also consumed in the territories of Jordan, Syria, Lebanon and Palestine. This dish (generally considered a first course) is prepared based on Egyptian beans cooked in copper containers, over low heat, then served with olive oil, chopped parsley, garlic, lemon juice and onion. Ful medames may also be accompanied by other ingredients (such as eggs), and its original recipe seems to date back to the era of Ancient Egypt.

The Mezze

Among the Mezze, that is the typical Egyptian appetizers, very popular are the Felafel, which are a dish in the form of legume, spicy and fried meatballs. Among the most used legumes we find: beans, chickpeas and lentils, everything is usually minced and seasoned with sumac, garlic, onion, cumin and coriander. The Falafels substituted the meat during the days of the Egyptian Coptic days. In Egypt the most widespread Falafel are those based on broad beans.

Koshari

A typical dish of the Egyptian culinary tradition based on rice, pasta, lentils and chickpeas and to which are added a layer of Egyptian garlic, vinegar that are amalgamated with spicy tomato sauce. Everything is usually garnished with fried onions that help to give the dish a special flavor. An ideal dish for vegans and vegetarians, given the lack of meat, although lately it is spreading the custom of adding fried liver or lamb.
