Legume native to Asia, the broad bean is very popular on the island. Most of the island families cultivate it in the countryside gardens and in the mountains, far from population centers. Its sowing takes place in the middle of winter to have it harvested in spring, a period in which the fresh beans are consumed. During the winter dry fava beans are used for succulent dishes based on vegetables and pork. The Favata Sassarese, a dish of northern Sardinia, is based on dried fava beans, once considered poor because it was affordable for farmers and shepherds, but today it is recognized as one of the most sought-after dishes by gourmets and lovers of taste.
