The panella is a chickpea flakes, a typical street food of Palermo cuisine.
They can be bought in many places in the city, especially in the "friggitorie", served mostly in the midst of the Mafalde, baking forms of about 200 grams with the crust covered with sesame seeds.
Sicilians eat panelle as snacks or inside sandwiches accompanied by classic sauces like Ketchup and Mayonnaise.
