It is a chain of restaurants distributed throughout New York, including Brooklyn and Harlem, specialized in making gigantic and succulent portions of Barbecue Ribs. The idea of giving the Dinosaur name to this chain came from the founder John Stage and his two partners, when they decided to bring these ribs covered in barbecue sauce to gatherings of hungry centaurs.
